Description

Pretty much the best pancakes ever, compliments of my husband’s grandmother Edna Mae. I love the texture because it’s lighter than regular pancakes and they don’t make you feel so stuffed!

Ingredients

  • 1 cup Sour Cream
  • 7 Tablespoons All-purpose Flour
  • 2 Tablespoons Sugar
  • 1 teaspoon Baking Soda
  • ½ teaspoons Salt
  • 2 whole Large Eggs
  • ½ teaspoons Vanilla Extract
  • Butter, For Frying And Serving
  • Warm Syrup, For Serving

Preparation

In a small bowl, whisk together eggs and vanilla. Set aside.

In a separate small bowl, stir together flour, sugar, baking soda, and salt.

In a medium bowl, stir together the sour cream with the dry ingredients until just barely combined (don’t overmix.) Whisk in the egg mixture until just combined.

Heat a griddle over medium-low heat and melt some butter in the pan. Drop batter by 1/4 cup servings onto the griddle. Cook on the first side until bubbles start to form on the surface and edges are starting to brown. Flip to the other side and cook for another minute. (Pancakes will be a little on the soft side.)

Serve with softened butter and syrup.

The recipe says it takes 10 minutes to make. Believe me, you will be enjoying them in 10 minutes. So, quick. These are amazingly light and flavorful. The recipe made 8 pancakes.

I like buttermilk pancakes, but these are absolutely fantastic. I will not make anything else.

I made these this morning and oh boy were they scrumptious! I even have to go far as to say that I think they had better flavor than any I have tasted at IHOP. Perfect Sunday breakfast.

These are great! I definitely prefer them to our other “quick” pancakes, which generally use Bisquick as a base. These area easy peas-y, tender, and lovely!

Amazing! Make them exactly according to the recipe. They do take a little longer to cook than normal pancakes but don’t be alarmed!

I’m not much of a pancake person because I usually find them too bread-like. I grew up overseas with more dairy based (even curd cheese based) pancakes and this was such a delight to find! Something in between that I love love love. My hubby and kids are so happy that I’m making lots of pancakes now, they love them too! :)
