Description

I have tried almost every box mix you can think of for pancakes and none of them ever taste as good as the stuff you get in breakfast restaurants. I know a box mix sounds super easy but you still have to add oil, water, and eggs. By the time you’re done with adding all those ingredients, it’s easier (and better for you) to make your own pancakes from scratch!

Also includes a recipe for homemade whipped cream.

Ingredients

  • FOR THE PANCAKES:
  • 1 cup Flour
  • 2 teaspoons Baking Powder
  • ½ teaspoons Salt
  • 1  Egg
  • ½ cups Milk
  • 1 teaspoon Vanilla Extract
  • ½ cups Water
  • 1 Tablespoon Canola Oil
  • ½ cups Chocolate Chips
  • FOR THE WHIPPED CREAM:
  • 1 cup Heavy Cream
  • 1 teaspoon Vanilla Extract
  • 3 Tablespoons Confectioners Sugar

Preparation

For the pancakes:
Combine flour, baking powder and salt. Whisk milk, vanilla water, egg, and oil. Combine dry and wet ingredients by whisking them until only a few lumps in the batter remain.

Heat skillet to medium low. Once preheated, spray with nonstick spray. Place the chocolate chips in a bowl or cup next to skillet for easy access.

Add about ½ cup of the batter to the skillet. Wait until bubbles start to form and then add chocolate chips (sprinkle as much as you’d like). With a wide metal spatula, flip pancake over and continue cooking for an additional 1–2 minutes until golden brown.

For the whipped cream:
In a large bowl, whip cream until stiff peaks are just about to form. Beat in vanilla and sugar until peaks form. Make sure not to over-beat, cream will then become lumpy and butter-like.

Serve whipped cream along with pancakes.
