Description

Yummy fruit breakfast! Any fruit can be substituted.

Ingredients

  • 1 whole Bakery French Bread
  • 2 packages (8 Oz. Package) Cream Cheese
  • 2 cups Blueberry Pie Filling
  • 12 whole Eggs
  • ⅓ cups Real Maple Syrup, Plus 1/4 To Drizzle Over Casserole
  • 2 cups Milk
  • Powdered Sugar Or Blueberries, For Garnish (optional)

Preparation

Grease a 13×9 pan. Tear half of the bread loaf into 1-inch cubes and spread evenly on the bottom of the dish. Cube cream cheese and sprinkle evenly over the bread. (It’s easier to tear cream cheese at room temperature and with your hands, although it’s a little messier.) Spoon the blueberries over the cream cheese. Tope with remaining bread, torn into 1-inch cubes.

Mix eggs, 1/3 cup maple syrup and milk in a large bowl and pour over the casserole. Cover with foil and refrigerate at least 1 hour or up to overnight. (Overnight is better). Bake at 350ºF for 30 minutes covered in foil. Uncover and bake an additional 30 minutes. Take out of the oven and drizzle the remaining 1/4 cup maple syrup over the casserole while hot.

Garnish with powdered sugar and additional blueberries if desired.

Hi – this looks excellent. You say to tear only 1/2 the bread into cubes but you tear the other 1/2 also to use for the top?

I’ve made this before for my kids for our weekly Saturday Brunch….they were quite upset when I made it and took it to a ladies brunch yesterday! It’s a family favorite, and I’m sending my friends here for the recipe! Thank you!

I made this using only 1 1/2 packages of cream cheese and using fresh blueberris instead of the pie filling since I knew it would be way too sweet for my family. It worked out well. I loved how easily it came together, and how it could be adjusted to our taste.
