In a bowl combine the flour, baking powder, sugar and salt.
In a separate bowl combine milk and egg, then mix with the the dry ingredients. Do not overmix. You want it to be lumpy and almost not combined.
Heat a large frying pan over medium high heat. Drop mix into the frying pan depending on the size of pancakes you want. I like making silver-dollar-sized pancakes. When the top starts to bubble and form craters, flip over and then cook until ready. Place a pat of butter over the cooked pancakes and syrup as desired.
This makes 3-4 servings.
