Description

If you love orange juice and you love moist breakfast cakes, then this is the recipe for you! Orange juice makes this oh-so-good!

Ingredients

  • 1 box (18.25 Oz. Box) Yellow Cake Mix
  • 1 box (small 4-serving Size) Vanilla Pudding Mix
  • 1-½ cup Orange Juice, Divided
  • ½ cups Oil
  • 4 whole Eggs, Beaten
  • 1 stick Butter
  • ½ cups Sugar

Preparation

Preheat oven to 350F.

Mix together yellow cake mix, vanilla pudding mix, 1 cup orange juice, oil and eggs. Pour into a greased and floured bundt cake pan and bake for 50 minutes or until an inserted toothpick comes out clean.

While cake is baking, heat the butter and sugar in a small saucepan on high heat until melted, then reduce temperature to medium and mix in the remaining 1/2 cup orange juice. Cook just long enough until all ingredients are melted and bubbling, then remove from heat.

After cake is out of the oven and still warm in the pan, pierce the top with a fork several times. Pour warm butter mix over the top and allow to soak into cake. Once it has been absorbed and the cake has cooled enough to handle, take a butter knife and separate the cake from the edge and invert onto a serving plate.

Hi Kathy, Sorry I just saw this comment! Yes, substitute away! We have chosen to replace all cooking oils with olive (not extra virgin, too strong) and have not been able to tell a difference at ALL! Even in cookies and cakes! Either way, hope you liked it!

You had me until “olive oil, not extra virgin”. This for me would me an overwhelming, strong oil. Can canola be used in place of the olive oil?
