Description

Tired of eating oatmeal in a bowl? How about on a plate? Try these delicious pancakes and never look at oatmeal the same way again.

Ingredients

  • 2-½ cups Dry Rolled Oats
  • 6 whole Egg Whites
  • 1 cup Butter Milk
  • 1 teaspoon Baking Powder
  • 1 Tablespoon Canola Oil
  • 1 teaspoon Cinnamon
  • 1 teaspoon Vanilla

Preparation

Place all ingredients in a blender. Blend the mixture for 20 seconds, or until smooth. Spray a skillet with cooking spray. Heat over medium heat. Pour 1/4 cup of pancake mixture in the pan. Cook until the pancakes are dry and bubbly on the edges, and bubbles appear on top. Turn and brown the other side. Serve with applesauce, bananas, strawberries, or maple syrup.

This was a lifesaver! I promised my kids pancakes, but I found a few bugs in the flour. This was the only recipe that I found without flour, so I gave it a try. They smell like oatmeal cookies, and my kids, even the picky one, devoured them! I’ll definitely make these again. The only substitution I made was almond milk for the buttermilk. My little one has lactose issues.
