Description

Talk about a kick start to the day. RIGHT HERE, PEOPLE.

Ingredients

  • 1 whole Whole Grain English Muffin, Split In Half
  • ¼ cups Favorite Cheese
  • 1 ounce, weight Sliced Prosciutto
  • 1 Tablespoon Extra Virgin Olive Oil
  • 1 cup Any Dark Green: Spinach, Arugula
  • 1 whole Egg
  • 1 pinch Salt
  • 1 pinch Ground Pepper

Preparation

Sprinkle the top half of the muffin with cheese and and toast in a toaster oven until cheese is melted and bubbly.

Heat a small skillet over medium-high and add the prosciutto. Cook until it starts to crisp. Remove from the pan and set aside. Add the oil, swirl to coat the pan and throw in the spinach. Saute until wilted, 30 seconds. Remove and set aside. Add the egg, sprinkle with salt and pepper and fry to your preferred doneness. Flip and finish cooking. I like mine a little runny. I’m dangerous in life.

Serve as a little sandwich! BAM.

Great little breakfast! And easy to switch up depending on what you’re in the mood for or have on hand.
