Description

These are so delicious and so easy to make. Plus, they’re perfect for little hands of all ages! I think the best part is that they are also healthy A serving is 3 mini frittatas and that is only around 80 calories. Pair that with a muffin or piece of fruit and you have an easy, healthy breakfast that will actually last you through the morning (go protein!).

Ingredients

  • ½ cups Finely Chopped Onion
  • ⅔ cups Diced Reduced-Fat Ham
  • ⅓ cups Shredded Reduced-Fat Extra-Sharp Cheddar Cheese
  • 4 whole Large Egg Whites
  • 1 whole Large Egg
  • 2 Tablespoons Chopped Fresh Chives
  • ⅛ teaspoons Dried Thyme
  • ⅛ teaspoons Black Pepper

Preparation

Preheat oven to 350°F.

Coat a frying pan with cooking spray and place over medium high heat. Add onion to the pan and saute for 2 minutes or until lightly browned. Add ham into the pan and saute with onions for 3 more minutes. Remove from heat and cool at least 5 minutes.

In a large mixing bowl, combine remaining ingredients and stir with a whisk or electric mixer on low until well combined. Add ham mixture and continue to mix until well combined.

Spoon mixture into 24 mini muffin cups that have been sprayed with cooking spray. Bake for 20 minutes or until set.

Can be stored overnight in refrigerator or frozen. If reheating from frozen, do so in the microwave for 20 seconds for 3 mini frittatas.
