Description

Make ahead breakfast burritos that fill you up all the way to lunch. My goodness, I have been wanting to do these for months! Easy reach-in-and-microwave-them healthy breakfasts that are a fraction of the cost of what McDonald’s would cost you. The fact that they are probably twice the size and a million times healthier helps, too!

Ingredients

  • ½ whole White Onion, Diced
  • ½ whole Green Pepper, Diced
  • 1 pound Sausage, cooked and crumbled
  • 12 whole Large Eggs, Beaten
  • ½ cups Chunky Salsa
  • 12 whole Burrito Sized (10 Inch) Flour Tortillas
  • 2 cups Shredded Cheddar Cheese

Preparation

Chop onion and green pepper into small pieces, set aside. Brown and crumble sausage in a large fry pan. Right before the sausage is done browning, throw in the onion and green pepper. Once onion is a golden color, take mixture and drain. Set aside.

Mix eggs together until well scrambled. Place in the same large frying pan and scramble over medium heat. Cook until the eggs are slightly wet and set aside. Mix in sausage mixture and salsa.

Warm tortillas in microwave for 20 seconds. One at a time, place 1/2 cup of egg mixture onto a burrito, top with cheddar cheese and wrap. Place finished burritos side-by-side in a baking pan or cookie sheet. Freeze for 1 hour.

Once frozen, remove from the freezer and wrap in foil or plastic wrap. Place in a large bag and continue to freeze.

To heat from frozen, take the burrito out of the wrap and wrap in a paper towel. Place on a microwave safe plate and microwave on high for 1 1/2 to 2 minutes.
