Description

A great brunch recipe – serve with bacon and fresh fruit.

Ingredients

  • 1 whole Egg
  • ½ cups Flour
  • ½ cups Ricotta
  • ½ teaspoons Vanilla
  • 3 Tablespoons Sugar
  • ½ cups Powdered Sugar, Plus Extra For Sprinkling The Cooked Beignets
  • ½ Tablespoons Lemon Zest
  • 1 pinch Salt
  • 1 pinch Cinnamon
  • Vegetable Oil, For Frying

Preparation

Combine all ingredients except the oil (dough will be sticky). Drop by rounded spoon fools into hot oil and cook 2-3 minutes until golden brown (turn to ensure even cooking). Remove from the oil onto paper-towel lined plate and sprinkle with powdered sugar! Repeat the process with the remaining batter.

I made these Saturday and my biggest complain is that they did not cook in the middle and were still liquid batter. The outsides were perfect but the middles were uber gooey. I would like to know what temp you fried yours at b/c mine obviously didn’t work. The flavor was really good though…the lemon wasn’t overpowering and they had a really nice texture but the correct frying temp eluded me.
