Description

Everything was made from scratch and is absolutely divine! A morning must for those who love crepes.

Ingredients

  • 1 cup All-purpose Flour
  • 2  Eggs
  • 1 cup Evaporated Milk
  • ¼ teaspoons Salt
  • 2 Tablespoons Melted Butter
  • 2 teaspoons Vanilla Extract, Divided
  • 1 cup Heavy Cream
  • 1 Tablespoon Powdered Sugar
  • 1 cup Sugar
  • 1 cup Water
  • 1-½ cup Chopped Strawberries

Preparation

For the crepes, you begin by adding the flour and eggs to a large bowl. Mix them. Then slowly add the milk and mix it well together. After that, add the salt, butter, and 1 teaspoon vanilla extract and blend all the ingredients well together.

Spray some nonstick cooking spray on a small pan and turn the heat of the stove to medium high heat. Pour a 1/4 cup of crepe batter onto the pan and begin to tilt the pan in a circular motion to spread the batter. Let the crepe cook on each side for two minutes and flip with a spatula. Once you have finished making all your crepes, set them aside.

Now for the whipped cream. Make sure you use a chilled bowl and add the heavy cream, the remaining 1 teaspoon vanilla extract, and powdered sugar to the bowl. With an electric hand mixer, blend it until it thickens up and forms peaks. Cover the bowl and place it in the refrigerator to chill.

For the strawberry syrup, get a saucepan and place it over a stove that has been heated on high heat. Pour the granulated sugar and water and let that begin to boil. Then slowly add the strawberries and reduce the heat to a simmer. Stir it for about 10 minutes until the syrup has thickened.

To assemble the crepes, add some strawberry syrup into a crepe and roll it up like a burrito. Then add some whipped cream, powdered sugar, and maple syrup on top and enjoy!
