Description

Oatmeal so delicious, it’ll convert all you oatmeal haters out there.

Ingredients

  • 2 whole Eggs
  • ¾ cups Brown Sugar
  • ⅓ cups Butter, Melted And Cooled Slightly
  • 1-½ teaspoon Baking Powder
  • 1-½ teaspoon Vanilla Extract
  • 3 teaspoons Ground Flax Seed
  • 1 teaspoon Cinnamon
  • 1 teaspoon Nutmeg
  • 1 pinch Salt
  • 1 cup Plus 2 Tablespoons Milk
  • ½ cups Shredded, Sweetened Coconut, Toasted
  • 3 cups Rolled Oats

Preparation

1. Lightly grease an 8″x8″ baking dish.

2. Mix eggs and brown sugar in the bottom of the dish, whisking to remove lumps. Add melted butter and carefully whisk to combine.

3. Add baking powder, vanilla, ground flax seed, cinnamon, nutmeg and salt directly to the dish and whisk well. Carefully add the milk and stir to combine.

4. Add the toasted coconut and oats and carefully fold into the mixture, making sure everything is combined really well. Cover the dish with plastic wrap and refrigerate overnight.

5.The next morning, preheat the oven to 350 degrees and bake the oatmeal (remove the plastic wrap first, of course) for approximately 45 minutes, or until the edges are brown.

6. Remove from oven and let cool for a few minutes. Then cut yourself a piece, top it with toasted walnuts and dried cherries, and pour some warm milk over the top. Enjoy!

I eat baked oatmeal every day. I love it! Your recipe is very similar to the one I use, but I really like the idea of adding coconut. Mmmmm.

This was alright, i like that it was soaked before hand(i added some whey to help reduce the phytic acid), but the flavor wasnt anything special unfortunately. I have my favorite, and this one did not surpass that.

I’ve tried a few different baked oatmeal recipes now, and this one is definitely my favorite. I love that I can sneak in something healthy like wheat germ and my kids are none the wiser. The spices are the perfect blend, and the texture is neither mushy nor dry. It’s perfect!

For other Tasty Kitchen users: If you forgot to put this together the night before, don’t worry. It still comes out fabulous.
