Description

This quiche will make you want at least 2 slices. I never met a person who only wanted one.

Ingredients

  • 4 Tablespoons Melted Butter
  • 1 package (20 Oz. Size) Simply Shredded Hash Browns
  • 8 slices Bacon, Chopped And Fried To Crisp
  • ½ pounds Jimmy Dean Original Sausage
  • 3 whole Large Eggs
  • 1 cup Half-and-half
  • Salt And Pepper
  • 1 cup Shredded Swiss Cheese
  • ¼ cups Scallions

Preparation

Preheat oven to 450ºF.

In a 9-inch pie plate, toss melted butter with hash browns. (If you buy the frozen hash browns make sure you thaw and drain them before adding them into the butter). Gently press hash browns into the bottom of the plate and up the sides to form the crust. Bake for 20-25 minutes or until golden brown. While that is cooking, cook bacon in a skillet over medium heat until crisp. And crumble the Jimmy Dean sausage and cook it in a skillet over medium heat until browned all the way through.

In a large bowl mix together eggs, half-and-half, and salt and pepper. Add cheese, bacon, sausage, and scallions to the bottom of the crust. Pour egg mixture evenly over the top. Return back to the oven and lower temperature to 350ºF. Bake for 30 minutes or until it is puffed up and golden brown. Let rest and then slice.

This was pretty tasty. The recipe doesn’t say whether or not to thaw the potatoes first, so it should be noted that you DO need to thaw the potatoes, or the butter will solidify on them. :-)
