These are easy to prepare and make for a very filling breakfast. The pico de gallo makes them so flavorful! The nice thing about the recipe is that it can be made for just one person, or twenty.
Grease a muffin tin and line each cup with a slice or two of ham, with the ham extending above the edges. Scoop in the pico de gallo until the cup is half full. Add a little pat of butter and some salt and pepper to taste. Crack an egg on top and lightly poke it down into the veggies. Put a mound of grated cheese on top (I like Monterey Jack).
Bake in a preheated oven at 400 degrees for around 20 minutes, or until the top expands like a muffin. Let the ham cups sit for a couple of minutes before removing to a serving dish.
Serve with salsa and sour cream.
