Description

Very simple and filling recipe that is perfect for breakfast or snacks!

Ingredients

  • 18 ounces, weight Rolled Oats
  • ½ cups Slivered Almonds
  • ½ cups Walnuts
  • ½ cups Macadamia Nuts
  • ½ cups Pistachio Nuts (no Shells)
  • 4 Tablespoons Brown Sugar
  • ½ teaspoons Cinnamon (to 1 Teaspoon)
  • ½ teaspoons Salt
  • ¼ teaspoons Nutmeg
  • ⅓ cups Vegetable Oil
  • ⅓ cups Honey (to 2/3 Cup)
  • 1 teaspoon Vanilla Extract
  • 2 Tablespoons Grade A Or B Maple Syrup (to 4 Tablespoons)
  • ½ cups Dried Mango, Chopped
  • ½ cups Dried Apricots, Chopped
  • ½ cups Dried Cranberries
  • ½ cups Raisins (optional)

Preparation

Preheat the oven to 250 degrees F.

Add the oats, nuts, brown sugar, cinnamon, salt and nutmeg to a medium bowl and mix with a wooden spoon.

In a small bowl, mix the oil, honey (starting with 1/3 cup but you can use up to 2/3 cup), vanilla extract, and maple syrup. Taste to see if you want more maple syrup or honey and adjust. Drizzle the wet ingredients over the oat mixture. Mix until all the oats and nuts are coated. If you need more honey, add it now.

Spread the granola out onto a baking sheet lined with a silicon mat and bake for about 40-60 minutes, or until the oats are cooked and nuts are lightly toasted.

Remove the granola from the baking sheet and transfer to a medium bowl. Add the dried fruit and mix until fully incorporated.

Serve with milk or enjoy plain as a snack!
