Description

Easiest cake ever to make with just a few ingredients. It is grain, gluten and sugar-free!

Ingredients

  • 3 Tablespoons Any Type Of Nut Flour Like Almond Or Hazelnut Meal
  • ½ teaspoons Cinnamon
  • 5 Tablespoons Cocoa Powder
  • 2 whole Eggs
  • ¼ cups Sweet Potato Puree
  • 1 teaspoon Apple Cider Vinegar
  • 2 whole Cherries, For Topping (optional)

Preparation

Preheat oven to 350ºF.

Place nut flour, cinnamon, and cocoa powder into a bowl. Next add in eggs, sweet potato puree, and apple cider vinegar.

Stir till combined. Lightly oil your ramekins and spoon the batter into the ramekins. If you want, place a few cherries on top and press them into cakes. We used frozen cherries that we let come to room temperature a little.

Placed in the 350ºF oven. Bake for about 30- 35 minutes. To tell when these cakes are done, the sides will start to pull away from the ramekin and cake will be light to touch.

Note: if you use a muffin pan, I would just fill up 2 muffins liners.

Let cool for a few minutes and pop out of ramekins.

I wish it had been but this is really not a great recipe. It had far too much cocoa and unfortunately, turned out dry and bitter :(
