Description

This is the easiest and yummiest granola ever. Packed with goodness and takes just minutes to put together!

Ingredients

  • 1 cup Nuts Of Choice (I Used A Combination Of Almonds And Walnuts)
  • 1 cup Gluten Free Whole Grain Rolled Oats
  • ¼ cups Organic Extra Virgin Coconut Oil
  • 3 Tablespoons Pure Dark Maple Syrup (dark Amber Maple Syrup Has A Much Deeper Flavour)
  • ½ teaspoons Ground Cinnamon
  • ¼ teaspoons Freshly Grated Nutmeg
  • 1 dash Salt
  • ½ cups Dried Fruit (I Used A Combination Of Prunes And Raisins)

Preparation

Toast nuts. I personally love walnuts and almonds in my granola as those 2 are very heart healthy and contain many very healthy fats as well as vitamin E, protein, fibre and magnesium. Very good stuff to start (or in my case, end) your day with!

While you’re getting the nuts as crunchy as you’d like, measure out oats. Add oil, maple syrup (dark amber maple syrup has a much deeper flavour), cinnamon, freshly grated nutmeg and a dash of salt to bring out all the flavours. Mix well and spread out on a baking sheet at 350°F for about 15 minutes or until golden.

Meanwhile, chop up dried fruit of choice. I love prunes and golden raisins in my granola so I chopped up a 1/4 cup of prunes and 1/4 cup of raisins.

Once oat mixture turns golden, toss with nuts and dried fruits and place back into the oven for 4–5 minutes. Turn off oven and let mixture dry out further for about 10 minutes but keep an eye to make sure that the dried fruit doesn’t burn.
