Description

A homemade granola that tastes like the holidays.

Ingredients

  • 4 cups Instant Oats
  • ¼ cups Flax Seeds
  • ¼ cups Wheat Germ
  • 1 teaspoon Cinnamon
  • 1 teaspoon Ground Ginger
  • ¼ teaspoons Ground Cloves
  • ¼ teaspoons Nutmeg
  • ¼ cups Brown Sugar
  • ⅛ teaspoons Sea Salt
  • 1 teaspoon Vanilla Extract
  • 2 Tablespoons Canola Oil
  • ¼ cups Pureed Pumpkin (canned)
  • ¼ cups Molasses

Preparation

Preheat oven to 400F.

In a medium bowl combine oats, flax seeds, wheat germ, cinnamon, ginger, cloves, nutmeg, sugar and salt.

In another bowl combine the vanilla, oil, pumpkin and molasses. Add the wet mixture to the dry mixture and mix well.

Spread combined mixture onto a baking sheet lined with parchment paper. Bake for 15 minutes. Stir granola and break up large chunks. Bake again for 15 minutes or until golden and crunchy. (Depending on your oven and what size pan you use, you may have to bake longer or shorter than the time noted, just keep your eye on the granola and stir often).

I love gingerbread, so I was really looking forward to this granola. It was a total disappointment. I cooked it a good 20 minutes more than the recipe called for and still had pieces that were unpleasantly chewy. The texture of the “chewy” bits was decidedly gluey and the salt and ginger taste was overwhelming. The batch went straight into the garbage. Plus side is that is did make my house smell amazing!
