Description

A warm, buttery, cinnamon muffin.

Ingredients

  • FOR THE MUFFINS:
  • ⅓ cups Melted Butter
  • ½ cups Sugar
  • 1 whole Egg
  • 1-½ cup All-purpose Flour
  • 1-½ teaspoon Baking Powder
  • ¼ teaspoons Ground Nutmeg
  • ½ cups Milk
  • FOR THE TOPPING:
  • 1 teaspoon Ground Cinnamon
  • ½ cups Sugar
  • ½ cups Melted Butter

Preparation

Preheat oven to 350ºF. Spray a muffin pan with nonstick cooking spray or use muffin papers.

In a bowl, sift together all dry ingredients. Add wet ingredients and stir until combined. Spoon batter into muffin tins. Bake for 20-25 minutes, or until they just start to turn a bit golden at the edges.

For the topping, mix sugar and cinnamon in a small bowl. Place melted butter in another small bowl. Dip the warm muffins in melted butter, then in the cinnamon sugar.

I made these for my son’s birthday today, and they were delicious! The two changes I made were: I put a small cube of cream cheese in the center of the batter and then topped it with more batter, and instead of putting the cinnamon sugar coating on top, I used some of Pioneer Woman’s leftover maple icing from her cinnamon roll recipe. YUM!!!
