Description

Naturally sweetened by figs, this takes oatmeal to another level of yumminess! By soaking the oats overnight, the end result is a much creamier, easier on the stomach, oatmeal porridge brimming with cinnamon, vanilla, and fig flavor.

Ingredients

  • 1 cup Steel Cut Oats, Uncooked
  • 4 cups Unsweetened Almond Milk
  • 3 Tablespoons Chia Seeds
  • 8  Dried Figs, Chopped Small
  • 1 Tablespoon Cinnamon
  • 1 teaspoon Vanilla Extract

Preparation

1. Rinse oats well, then put them in a bowl with the almond milk, chia seeds, figs, cinnamon, and vanilla. Mix well, then cover and let sit in the fridge overnight.

2. In the morning, put the oats in a medium pot and simmer for 10-15 minutes, or until tender. Serve warm with toppings of choice. If you want to freeze the leftovers, let them cool completely then portion them into small freezer ziplock bags.

To re-heat the oatmeal, just remove from the bag (it will come out in a block), place in a microwave safe bowl, and microwave for 2 minutes. Stir the oats, and if necessary, microwave for another 30 seconds to a minute.

Topping ideas include chopped figs, fresh lemon zest, cinnamon, chia seeds, chopped almonds, and hemp seeds.
