Description

A crunchy-salty-sweet peanut butter granola packed with dark chocolate!

Ingredients

  • ¼ cups Canola Oil
  • ⅓ cups Maple Syrup
  • ¼ cups Chunky Peanut Butter
  • ½ teaspoons Salt
  • 1 teaspoon Cinnamon
  • 4 cups Old Fashioned Oats
  • ¼ cups Ground Flaxseed
  • ½ cups Dry Roasted Peanuts
  • ½ cups Sunflower Seeds
  • ⅔ cups Chopped Dark Chocolate (or Miniature Chocolate Chips)

Preparation

Preheat oven to 275F.

Bring the canola oil, maple syrup, peanut butter, salt and cinnamon to a simmer over medium heat on the stovetop. Simmer for three to five minutes.

While that’s cooking, mix together the oats, ground flax, peanuts and sunflower seeds. Pour hot syrup mixture over the oats and toss well to coat. Spread out granola onto two lined sheet trays and bake for 40 minutes, stirring occasionally and turning trays midway through.

Let granola cool completely before adding the chopped chocolate.

It’s so delicious! As my nephew got married at The Elvis Chapel in Vegas, I absolutely had to make some for him and his new bride! I made two versions: one with added grated coconut, coconut shaves and dried pineapple (“Aloha from Hawaii”), the other with extra peanuts, extra chocolate, pumpkin seeds and banana chips (“Too Much”).

Thanks for a great recipe! I didn’t have any maple syrup or peanuts, so subbed with honey and sliced almonds. I also added an 1/8cup Nutella, 1/4 cup wheat germ and some dried mix berries. So good! I made a huge batch so I could give some away as gifts :)

I added 1/2 a cup chopped banana chips and 1/2 cup coconut-this stuff is delicious!

This is a tasty granola recipe. It is not too sweet, so I feel okay about throwing in a bunch of chocolate. :) My husband loves to put it in his oatmeal.

Delicious!! Thank you for sharing this wonderful granola. I had mine in the oven on one large cookie sheet for 30 minutes, and it turned out perfect!
