A quick supper for one!
Place a one cup oven proof baking dish on a rimmed baking sheet and place in the oven to heat the dish.
Preheat oven to 450.
While oven is heating, whisk together egg and egg whites, 1 Tablespoon cheese, milk, salt and pepper. Set aside.
In a small skillet, heat 1/4 teaspoon olive oil, add the minced shallot and cook for 2 minutes. Add spinach and cook for another 2 minutes. Now, add the spinach mixture to eggs.
Remove heated dish from oven and spray with cooking spray. Immediately pour in the egg mixture and top with the remaining 1 Tablespoon cheese.
Bake until frittata is pulled up and golden, about 15 minutes.
