Here’s an easy recipe for you to make for your family for breakfast.
In large skillet, melt butter. Saute zucchini, onion, peppers, and mushrooms until tender. In a medium bowl, whisk together eggs, salt, and pepper until frothy. Add to vegetables. Allow to cook for 5-6 minutes.
Sprinkle with parsley and cheese. Transfer skillet to broiler and cook for 2-3 minutes until cheese is golden brown. Cool for 5 minutes before serving. Serves 4-6. Enjoy!
