Description

This is by far the best egg bake I have ever had!! This can be made the night before, just pop in the oven the next morning for delicious meal!! This is a family favorite!

Ingredients

  • ½ cups Melted Butter
  • 1 carton Eggs, One Dozen
  • ½ teaspoons Salt
  • ½ teaspoons Pepper
  • 5 drops Tabasco Sauce
  • ½ cups Sifted Flour
  • 1 teaspoon Baking Powder
  • 2 cups Ground Sausage (I Use Jimmy Dean's Spicy Sausage!)
  • 1 pound Shredded Monterey Jack Cheese
  • 1 pint Small Curd Cottage Cheese

Preparation

Melt butter and put 1/2 in a 9×13″ pan.

In a large bowl beat eggs; salt and pepper eggs to taste, add Tabasco sauce.

Add flour, baking powder, sausage, cheese, cottage cheese and remaining melted butter to eggs.

Poor egg mixture to 9×13″ pan. Bake at 400 degrees for 20 minutes. Reduce heat to 350 degrees for 30 minutes or until puffed light golden brown (or until knife comes out clean when tested).

This can be made the night before and stored in the refrigerator until ready to bake.

This is great! I’ve brought this to every work brunch for the last couple of months and it’s gotten rave reviews every single time.

The only thing I change is to add two small cans of diced green chiles for some extra kick!

I have this same basic recipe and it’s great. I love the addition of Tabasco and will try that the next time. I’ve also made this using a locally produced (Des Moines IA) vegetable cottage cheese which really adds to the flavor.
