Description

Sausage breakfast casserole made into miniature loaves! Eggs, cheese, sausage, sourdough bread… YUM.

Ingredients

  • 1 pound Breakfast Sausage
  • 1 loaf Sourdough Bread
  • 1-½ cup Shredded Monterey Jack Cheese
  • 10 whole Eggs, Beaten
  • 3 cups Milk
  • 1 pinch Salt
  • 1 pinch Pepper

Preparation

Preheat oven to 350 degrees (F). Spray mini loaf pans with cooking spray.

Brown breakfast sausage in a medium skillet. When it’s browned, drain grease. Tear bread into 1-inch chunks or smaller. Put bread into the bottom of each mini loaf, spreading evenly. Divide browned breakfast sausage evenly between the mini loaves, on top of the bread. Sprinkle cheese on top of the sausage.

In a medium bowl, combine eggs, milk, salt and pepper. Pour mixture into each mini loaf, dividing it evenly. Make sure each loaf is almost full, but not quite.

Bake at 350 degrees (F) for 25-30 minutes, or until eggs are cooked through and cheese is melted.

Hi! I’m so sorry I didn’t respond! I used 2 mini loaf pans, with 8 mini loaves in each one, so that’s 16 total. But you could use whatever you have! Even muffin tins would work.

Can’t wait to try. Thinking next Saturday!
So I will need 8 mini loaf pans?

Oh croissants would be soooo perfect…or left over holiday rolls! Oh the possibilities!

Yay! Your idea with the spinach and swiss cheese sounds delicious! There are probably a hundred different ways to make this. I was thinking that bacon and cheddar would be good too, maybe using croissants instead of sourdough bread… I imagine it being buttery and flavorful. Thank you for the review :)

I told my husband about them and his eyes lit up and asked me when I was making them……tomorrow morning!

Made these this morning! So easy and even my uber picky two year old ate them! The recipe is so versatile! I think I am going to make these the day after Christmas and instead of sausage I am going to use sauteed mushrooms, onions, and spinach and sub in swiss cheese!
