I dont know if I did something wrong, but this didnt really have that much flavor to me, it was just so-so. I think I will give it a try again, and see if it comes out any differently…

Great! Made this for a breakfast for dinner night and hubby couldn’t get enough.

This is one of my favorite breakfast dinners now. And it’s an acceptable no meat dish for my husband and kids.

The family LOVED it! But I am cheater and a tweak-er! So I used Rotel rather than chopping tomater’s and jalapenos… And I added Country Potatoes and Breakfast Sausage. But my husband and son asked for seconds. I may toss the fried tortilla’s on the side caz they got kind of soggy. But all in all it will be a regular dish in my house.

This recipe lacked flavor and my husband, who usually loves everything, said “I wouldn’t cook this again if I were you.” I do think adding sausage would help a lot.

I make this recipe for my man on a regular basis. We LOVE migas – best egg dish I’ve ever eaten! Who knew that fried corn tortillas stirred into eggs would be the greatest thing ever?!?!

I am so excited to try this recipe out. We love eating our Mexican leftover for breakfast sometimes with a good ol’ sunny side up egg on it. So this would totally mirror what we’ve been doing all the while….

Although we can’t get corn tortillas here, I’m guessing tortilla chips might work? Once in a while we can find those. Love Mexican and pretty much have to make my own here. Went to a “Mexican” restaurant recently and the salsa was pickled. LOL Mexican with an Argentine twist.

This one was a big hit… I made it on one of those days where I had more free time than I knew what to do with, so I also made the tortillas… Those days are few and far between!

I wasn’t sure if the crew would like this dish or not… in the words of my 8-year old “Mom, why didn’t you make this like when I was 4 – I LOVE IT!” So, there you go! Thumbs up!

Yummy! The corn tortillas end up tasting sweet against the other flavors. My husband said the only thing he would do is add meat. Yeah he is a meat and potatoes boy so that makes sense. This was great though.
