Description

Bring Mexican deliciousness to your breakfast table!

Ingredients

  • Butter, To Cook Eggs
  • 6 whole Eggs
  • ¼ cups Milk
  • Salt And Pepper, to taste
  • 4 whole Tortillas (fajita Style)
  • 1 cup Monterey Jack Cheese, Shredded
  • Olive Oil
  • Sour Cream And Salsa, To Serve

Preparation

Whisk eggs and milk in bowl. Melt some butter in a pan. Once melted, add egg and milk mixture. Scramble your eggs and add salt and pepper.

Heat oven to 350 degrees. Place two tortillas on a cookie sheet. When eggs are cooked, divide in half and place on tortillas.

Sprinkle cheese on top of eggs. Place the last two tortillas on top of cheese. Spread a little olive oil over the top of the tortillas. Place in oven and bake for 10 minutes or until golden. Cut quesadillas into four and serve with sour cream and salsa!

My family and I agree that these quesadillas were yummy and so easy to make…..we used Tex-Mex cheese and my own tortillas…..thanks for a great breakfast idea!
