Description

These mini frittatas make a perfect weekend breakfast.

Ingredients

  • 7 whole Eggs
  • 3 Tablespoons Milk
  • 5 slices Deli Ham, Chopped
  • ½ cups Shredded Cheddar Cheese

Preparation

Preheat oven to 350 degrees F. Spray 12 muffin tin cups with cooking spray. In a large bowl, whisk eggs and milk together. Stir in ham and cheese. Divide evenly between the muffin tins. Bake for 20 minutes or until set.

I think they would be just fine at room temperature. I even ate a few straight out of the refrigerator, and they were still good!

I had some leftover ham and made some of these for my son for breakfast and he loved them! I can’t believe I never thought of doing this before! I will do this with sausage or bacon too. So nice to have a fast and easy hot breakfast and the leftovers reheated well the next morning too.

Made these this morning for my daughters birthday breakfast. I substituted Jimmy Dean mild sausage for the ham. The whole family gobbled these up. I think I will make some more to freeze. I would like to see how the work as a grab, microwave and go on busy week day mornings. Thanks for sharing your delicious recipe!

I made these with sliced deli turkey and I sprinkled some italian bread crumbs on top before I baked them. I thought they were great, but my husband didn’t like them as much as I did.

These were so easy to make and the prefect Sunday morning breakfast. I used sausage instead of ham because we’re not big ham eaters at our house. Next time I might use more cheese and cook for less time because for me personally they were a little dry and were missing something but my husband loved them.

New here, and this was the second recipe I tried on this site! It’s tough to get my toddlers to eat in the morning, but they LOVED these! (I baked some in a regular-sized muffin tin, and some in a mini-muffin tin.)

We called them flying saucers and they gobbled them right up. Thank you for the great idea!
