Description

These yummy little things have become a Sunday morning staple in my house. They’re a cinch to whip up, and you can customize them in all sorts of ways; you can throw in whatever veggies, meat and cheese you have, as long as you’ve got eggs! Don’t underestimate the punch they pack, though– they’re quite filling!

Ingredients

  • 6 slices Cold Cuts (I Used Smoked Chicken Breast But Smoked Salmon Or Other Meat Would Be Great))
  • 6 whole Eggs
  • ½ whole Tomato, Sliced
  • 2 stalks Green Onion, Chopped
  • 1 dash Freshly Ground Black Pepper, To Taste
  • 6 slices Cheese (I Used Old Cheddar)

Preparation

Preheat oven to 300 F.

Grease each muffin cup. Use a 6-muffin muffin tin.

Press 1 cold cut (or salmon) into the bottom of each muffin cup. Crack an egg into each cup (don’t worry about keeping the yolk intact). Top with a tomato slice, and then sprinkle some green onion into each one. Ground some black pepper into each one. Bake until clear egg whites become white.
Remove from oven and add some cheese onto the top of each one. Bake again until cheese has melted and eggs have risen slightly. Remove each egg “muffin” carefully with a fork & enjoy!

This is the first recipe I’ve tried on Tasty kitchen, and it was yummy! I added some fresh Parsley and used gouda instead of cheddar because it was what I had on hand. It was very delicious. I would recommend baking the egg until it’s almost set before adding the cheese next time. It was a little runny. other than that, it was great! Now I have to think of a meat-free egg muffin for Mother’s day!

Mmm, spinach would be great! I’ll be sure to try that out!
Freezing them and having them ready to pop in the oven for quick meals is also something I bet would work really well with these.

My mom premakes something like this and reheats them through the week for her South Beach Diet. She loves to put spinach in them!

These were great! Made them with smoked salmon and Jarlsberg cheese on top. Easy to make and easy to modify to fit your preferences.

LOVED IT! I had to change up some to accommodate tastes, but love this is so adaptable. I even made two for me with a spinach base, mushrooms, tomatoes, few bacon crumbles, and mozzerella cheese! YUM! The kids loved the regular version, but we only had bacon so I put shredded potatoes on the bottom and bacon on top of that, Thanks for a great recipe!

These are awesome! I need to work out the timing based on my oven temp so that the yolks aren’t quite so hard, but these are easy and the kids love them!
