Melt 1 tablespoon of butter in a heavy skillet over medium heat. Then add ham, onions and minced garlic and saute until slightly browned. Add parsley and mix to combine. Crack eggs in and scramble them together with the ham and onion mixture. Add granulated onion and salt and pepper to taste. Sprinkle with Parmesan cheese, stir to combine and remove from heat.
Toast pitas using your favorite method. Butter tops and insides of bread. Fill with egg mixture. A smear of jam makes it perfect!
