Description

Delicious and quick baked breakfast/brunch omelet! Very nutritious and fluffy authentic Greek dish.

Ingredients

  • 4 whole Eggs, Beaten
  • 2 Tablespoons Light Cream
  • 2 Tablespoons Sweet Cream Butter, Melted
  • 1 Tablespoon Greek Olive Oil
  • ½ teaspoons Greek Oregano
  • ¼ teaspoons Black Pepper
  • ½ cups Plain Greek Yogurt
  • ¼ cups Red Onion, Diced Finely
  • 1 cup Fresh Spinach, Chopped (You Can Use Frozen Spinach, Well Drained)
  • ½ cups Feta Cheese Crumbles, For Garnish

Preparation

Preheat oven to 400 F.

In a large mixing bowl add eggs and cream and whisk together. Add melted butter and Greek olive oil and whisk again. Add Greek oregano, black pepper, Greek yogurt and diced red onion and whisk again.

In a non-stick or greased 9x12x3 baking dish add egg ingredients. Add spinach on top (it will fall into the mixture and that is fine), cover with aluminum foil and bake at 400 F for 10 minutes. Then remove the dish from the oven, uncover the dish and add feta cheese crumbles to the top. Put dish back into the oven, shut off the oven and let dish rest in the oven 5 more minutes.

Serve immediately on individual plates. Enjoy. Our family loves to serve this with fresh sliced ripe tomatoes.
