Description

Bacon, cheese, and eggs in nests made of hash browns and zucchini—a perfect start to a weekend morning.

Ingredients

  • 2-½ cups Shredded Hash Browns
  • 1 cup Grated Zucchini
  • 6 whole Large Eggs
  • 1 cup Milk
  • ½ teaspoons Dry Mustard Powder
  • 4 slices Bacon, Cooked And Chopped
  • 1 cup Shredded Sharp Cheddar Cheese
  • Salt And Pepper

Preparation

Preheat oven to 400 degrees F. Spray 12 muffin tins with cooking spray.

In a medium bowl, combine hash browns and zucchini. Season with salt and pepper. Place in the bottom of muffin tins, firmly pressing on the bottom and up the sides to create a “nest.”

In another bowl, whisk together eggs, milk, mustard powder, bacon, and cheese. Season with salt and pepper. Fill nests evenly with the egg mixture.

Bake in the preheated oven for 30–40 minutes, until the top is golden brown and the egg mixture is set. Let cool for 3 minutes before removing from the muffin tin.

super easy to execute but this recipe was a little bland in my opinion. i would love to get inventive with it (and probably will!). thanks for the inspiration.

These were great! I made them with riced cauliflower instead of hashbrowns since I can’t have potatoes- still tasted great! Thanks for the idea!
