Description

Warm, hearty, and packed with protein. This oatmeal is a quick and easy way to power up and start your day.

Ingredients

  • 4 cups Old Fashioned Oats
  • 3 teaspoons Baking Powder
  • 2-½ teaspoons Ground Cinnamon
  • ¾ teaspoons Kosher Salt
  • ½ cups Packed Brown Sugar
  • 4 whole Large Eggs, Lightly Beaten
  • 1 cup Unsweetened Applesauce
  • 1 cup 2% Or Whole Milk
  • 2 teaspoons Vanilla Extract
  • ¾ cups Dried Fruit Of Your Choice (Try Raisins, Cherries, Apricots, Blueberries, Or A Combination Of A Few.)

Preparation

1. Preheat oven to 325 degrees F.
2. Lightly spray a rectangular 11 X 8 inch glass baking pan with cooking spray.
3. In a large bowl, place oats, baking powder, cinnamon, kosher salt, and brown sugar. Whisk the dry ingredients until combined.
4. In a medium bowl, lightly beat the eggs. Add the unsweetened applesauce, milk, and vanilla. Whisk together until incorporated.
5. Pour the egg mixture into the oat mixture, and stir to combine. Fold in the dried fruit of your choice. (A peeled and diced fresh apple also works well.)
6. Spread the batter into the prepared baking dish, being sure to smooth the top.
7. Bake at 325 degrees for 40 minutes, or until lightly browned, and cooked through.
8. Cut into squares, and serve warm, with a splash of milk over top. Or allow to cool completely, cut into squares, cover with plastic wrap, and refrigerate. To serve, eat square cold, or place in a bowl, microwave to reheat, and serve with milk on top.

Easy and tasty. I added orange flavored cranberries. It’s good for breakfast and for fast bite to eat during the day. My grandkids eat it like a piece of cake with a glass of milk on the side for after school snack.

Made this on Sunday and have been eating it for breakfast every day since. I added dried cherries and pecans. It’s quick, filling, healthy and delicious, thank you for the recipe!
