Description

Orange vanilla muffins topped with a creamsicle glaze.

Ingredients

  • FOR THE MUFFINS:
  • ⅓ cups Sugar
  • 1 whole Egg
  • 1 whole Vanilla Bean - The Contents Of
  • 2 teaspoons Vanilla Extract
  • 2 cups Whole Wheat Pastry Flour (or All-purpose)
  • 1 teaspoon Baking Soda
  • ½ cups Vanilla Greek Yogurt
  • ½ teaspoons Salt
  • ⅓ cups Milk
  • ¾ cups Freshly Squeezed Orange Juice
  • 1 Tablespoon Orange Zest
  • ¼ cups Raw, Coarse Sugar For Garnish

  • FOR THE GLAZE:
  • ½ cups Powdered Sugar
  • 1 Tablespoon Heavy Cream
  • 1 Tablespoon Freshly Squeezed Orange Juice
  • 1 Tablespoon Orange Zest

Preparation

FOR MUFFINS:
Preheat oven to 350 degrees (F). Place muffin cups in muffin tins.

Mix sugar, yogurt and egg until creamy and light yellow. Add vanilla beans and vanilla. Add flour, baking soda, and salt and mix. Add milk and orange juice and mix. Fold in orange zest. Stir until completely smooth. Spoon the batter into the muffin tins. Top with coarse sugar.

Bake for 18-20 minutes, or until toothpick poked in center of muffin comes out clean. Top with glaze.

FOR GLAZE:
Mix all ingredients in a bowl until glaze forms. If needed, add more liquid until the desired consistency is reached. Drizzle over warm muffins.

I have made these once and used vanilla extract [did not have the bean] and added blueberry they were so great. I am baking some now and used blueberry yogurt and omited the zest so it would not be to much of the oj flavor. they should be great. If not, i will leave a post. On this one no news is good news

spicemama – yes! so sorry about that, i modified the recipe and forgot to drag that up. let me know how they turn out – i’ve had mixed reviews. some people loved them and a few tried it and they didn’t turn out. i have made them 3 times now and they’ve always turned out for me!

I am going to make these as soon as I get to the store! Just a quick thought- does the 3/4 c. orange juice that is listed in the glaze ingredients actually go in the muffin ingredients?

It’s my son’s turn to host “snack day” at his preschool tomorrow. I asked him what he wanted to take and he said cupcakes. I told him I would make muffins instead. This sounds like the perfect compromise recipe! I’m so glad I saw it posted today.

Unforgettably delicious! The whole family gobbled them right up and they were so grateful for a new flavor. We used vanilla bean paste instead of vanilla bean, just because I’m cheap like that. Love this recipe.
