Description

Protein packed and portable. These yummy energy balls will get your motor running, as you are running out the door. I adapted this recipe from The Creative Bite’s Cranberry Almond Energy Bites.

Ingredients

  • 1 cup Old Fashioned Oatmeal (not Instant Or Quick Cook)
  • ⅓ cups Sliced Almonds
  • ½ cups Almond Butter
  • ¼ cups Organic Honey
  • 1 Tablespoon Chia Seeds
  • ⅓ cups Toasted Organic Coconut Flakes
  • ⅓ cups Low Sugar, Dried Cranberries

Preparation

On a baking sheet place oatmeal and almonds and bake for 8–10 minutes at 350°F, stirring after a few minutes. Set mixture aside to cool.

Melt almond butter in a medium bowl, microwaving for about 30 seconds. Mix in cooled oatmeal almond mixture along with honey, chia seeds, toasted coconut, and low sugar cranberries.

Using a small ice cream scoop, form mixture into balls making them as uniform as possible. Garnish with extra coconut if desired. Energy balls can be stored in an airtight container for up to one week. They can also be frozen and will be good for 3 months.

I’ve tried a lot of “energy bites” recipes over the years, but this is the first one that I really truly loved. It holds together really well, the flavours are perfect, with just the right combination of softness and crunch. The only modification I made was that I used blanched sliced almonds (so they are slightly softer), and I gave them a rough chop to make them smaller pieces before mixing them in. I froze them on a tray before putting them in snack bags and then kept them frozen until we left for our camping trip, and then they functioned as an “ice block” in the cooler until the day they were designated for breakfast. They were quite a hit with my entire family, all 4 kids asked for more, as did hubby! These were a perfect compliment to our morning while camping, and will definitely be making them regularly.
