Description

Millet is a whole grain and complete protein. Its mild taste and soft texture make it the perfect ingredient for breakfast porridges and bakes. This is so tangy and sweet that you could have it as a dessert as well.

Ingredients

  • 1-⅓ cup Water
  • ½ cups Millet
  • ½ teaspoons Salt
  • 1 Tablespoon Coconut Oil
  • 1 cup Whole Cranberries, Fresh Or Frozen
  • 1 cup Walnuts, Chopped
  • 2 whole Apples, Chopped
  • 2 Tablespoons Coconut Sugar
  • ½ cups Unsweetened Applesauce
  • 1 teaspoon Cinnamon
  • ¼ teaspoons Ground Ginger

Preparation

In a small sauce pot bring water to a boil. Add millet and salt, reduce heat and cover. Simmer for 15 minutes. Remove from heat and add remaining ingredients. Stir to combine.

Scoop into a ceramic baking dish and cover with a lid or foil. Bake at 375ºF for 30 minutes. Remove foil and bake another 10-15 minutes till the top is golden brown.

Serve in cups with a dollop of cream, if desired. This goes well with a nice hot cup of herbal tea.

Wonderful way to integrate a very healthy non-wheat grain into your diet! I used honey instead of coconut sugar and subbed butter for the coconut oil (didn’t have either), also left out the nuts due to allergies. I’m sure it would have been better with them, though! It was very tasty, but needed a little more honey/brown sugar/milk to taste as the cranberries made it quite tart. I’d recommend making it the night before, plopping it into an ovenproof dish and just baking it the morning of. Otherwise it’s quite an endeavor to have finished in time for breakfast.
