Description

Here’s a recipe I like to make on cold winter mornings. Enjoy!

Ingredients

  • 3 cups Cooked Rice
  • 2 cups Whole Milk
  • 3 Tablespoons Butter
  • 1 teaspoon Cinnamon
  • ½ teaspoons Salt
  • ½ cups Dried Blueberries

Preparation

In a medium saucepan, combine the cooked rice, milk, butter, cinnamon, and salt. Bring to a boil, stirring often. Reduce heat. Cover and simmer for 6-8 minutes until thickened, adding blueberries after 4 minutes and stirring as needed. If desired, top with honey or brown sugar.

Makes 6 servings.

I really enjoy this recipe and keep coming back to it again and again when I have leftover rice. I combine everything the night before and keep it in the fridge so it is really easy to cook in the morning.
