Description

Homemade granola with sweet coconut, rich chocolate, and tart dried cherries. Warning: This granola is highly addictive!

Ingredients

  • 1-½ cup Rolled Oats
  • ½ teaspoons Salt
  • 1 teaspoon Cinnamon
  • 2 Tablespoons Cocoa Powder
  • ¾ cups Pecans (measured And Chopped)
  • ¼ cups Flax Seeds (optional)
  • 2 Tablespoons Coconut Oil
  • ⅓ cups Agave Nectar (or Honey)
  • ½ cups Dried Cherries
  • ½ cups Shredded Coconut

Preparation

Preheat oven to 300ºF.

In a large mixing bowl combine oats, salt, cinnamon, cocoa powder, and nuts. Set aside.

In a small sauce pot over low heat, melt the coconut oil. Once melted, whisk in the agave nectar and pour over the dry ingredients. Stir until well coated.

Pour evenly onto a parchment-lined baking pan. Bake for 20 minutes, stirring at the 10-minute mark. Your kitchen will begin to smell like heaven on earth.

After baking, allow to cool completely. Work in the dried cherries and coconut flakes. Serve with a splash of milk.

So yum. Made this to use with Greek yogurt for parfaits for kiddos breakfast. Could eat this all day long!
