A moist, full-of-coconut-flavor breakfast cake that’s actually healthy for you. Cake for breakfast. What could be better?
Preheat oven to 350ºF. Grease a small ramekin or other oven safe baking dish.
Combine flours, baking powder, cinnamon and salt in a small bowl.
Add remaining ingredients and mix together until incorporated.
Pour batter into greased baking dish and bake for 25-30 minutes until fully cooked but still moist.

I am definitely going to try this! Do you grind your own buckwheat flour and coconut flout? Will a food processor work? Hm, maybe you have info on your site, I guess I should check there too… Thanks!
