Description

Yes, millet is a component of bird seed. But you can eat it TOO! It has a nutty flavor and the consistency of porridge.

Millet is highly nutritious, non-glutinous and is easy to digest. It is considered to be one of the least allergenic and most digestible grains available. Millet is also a high source of niacin and magnesium, which are important for heart health.

Ingredients

  • 1 cup Millet, Soaked In Warm Water For 5-10 Minutes Prior To Cooking, Drained
  • 4 cups Water
  • 1-½ cup Skim Milk
  • 1 cup Sliced Bananas
  • ½ cups Shredded Coconut
  • ¼ cups Dark Chocolate Chips

Preparation

Combine water and milk in a nonstick saucepan over medium high heat. Bring to a boil, then add millet. Cook for 20-30 minutes over medium low heat without stirring, until mixture takes on a porridge-like consistency.

Ladle millet into four serving bowls. Add 1/4 cup sliced bananas, 2 Tablespoons shredded coconut, and 1 Tablespoon dark chocolate chips to each bowl. Enjoy!

I picked up some millet for super cheap at a Mennonite country store in rural Wisconsin and decided to try this. It was interesting. I liked the coconut, banana and chocolate, but the cooking method seemed a little strange. I know it is supposed to be porridge-like, but it seemed like way too much liquid. Next time I will probably just cook the millet in water and then add in milk to the desired consistency. Thanks for introducing me to millet. I’d love to see more recipes with it!
