Description

Perfect way to start any morning; a hot cup of coffee and a slice of delicious coffee cake!

Ingredients

  • FOR THE CAKE:
  • 1-½ cup Flour
  • 3 Tablespoons Baking Powder
  • ¼ teaspoons Salt
  • ½ cups Sugar
  • ¼ cups Unsalted Butter, Cut Into Small Pieces
  • 1 whole Egg
  • ¾ cups Milk, I Use Almond Milk
  • 2 teaspoons Vanilla Extract
  • FOR THE STREUSEL:
  • ½ cups Brown Sugar
  • 2 Tablespoons Flour
  • 2 teaspoons Ground Cinnamon
  • 2 Tablespoons Melted Butter

Preparation

1. Preheat oven to 375 F and spray your 8X8 baking dish with non-stick cooking spray.
2. In a small mixing bowl, prepare your streusel by mixing the brown sugar, flour, cinnamon and melted butter until combined. Set aside.
3. In a large mixing bowl, combine flour, baking powder, salt, sugar and butter. Set aside.
4. In a separate mixing bowl mix your wet ingredients for the cake; egg, milk and vanilla extract.
5. Combine wet and dry cake ingredients, but do not over mix.
6. Spoon half of your cake batter into the pan and top with half of your streusel. Top that layer with your remaining cake batter and smooth the top. Then sprinkle on the remaining streusel.
7. Bake for 20-30 minutes and enjoy warm!
