Description

For breakfast or brunch an easy and creative way to put all breakfast ingredients in a soft shell. Enjoy!!

Ingredients

  • FOR THE TORTILLAS:
  • ½ pounds, 2-⅝ ounces, weight All-purpose Flour
  • 2 teaspoons Salt
  • 1 teaspoon Sugar
  • 2 teaspoons Baking Powder
  • 10 tablespoons, 7 pinches Warm Water
  • FOR THE TACO ASSEMBLY:
  • ½  Onion
  • ½  Red Bell Pepper
  • 1  Wurstel Or Similar Link Sausage (big Size)
  • 2  Eggs, Beaten
  • 2 Tablespoons Grated Parmesan Cheese
  • 2 Tablespoons Milk
  • 1  Tomato
  • 2 Tablespoons Corn
  • 4 slices Cheddar Cheese
  • Salt, Pepper, And Plenty Of Oregano To Taste

Preparation

In a bowl mix flour, salt, sugar, baking powder and water, stirring until smooth and elastic. Divide into 8 balls of dough and roll them out into 10cm diameter disks. Oil a skillet, heat it over medium high heat, and cook the tortillas on both sides until browned to your liking. Set aside.

In the same pan fry choopped onion, pepper and wurstel over medium heat for about 5 minutes. Add eggs, parmesan and milk into a bowl. Then pour them over the onion mixture and cook for about 5 minutes, scrambling if needed.

Remove from heat. Let cool then add chopped tomato, corn and cheese cubes. Season with salt, pepper, and plenty of oregano and put the mixture into the soft tortillas. Keeep closed using a string or some chives.
