Preheat oven to 350 F.
In a skillet over medium heat, brown the sausage. Then drain off the grease and set aside to cool a bit.
In a big bowl, mix eggs, sausage, milk, cheese and salt and pepper to taste. Pour into 9 x 13 casserole dish. Top with croutons.
Bake at 350 F for 1-1 1/2 hours, or until nicely browned and a knife inserted in the center comes out clean.
Tip: If you make this the night before and refrigerator space is an issue, simply pour the egg mixture into a pitcher. Do not add croutons until just before you place in oven.
