Description

Another simple take on breakfast. Use flour tortillas and pack them with your favorite breakfast items, in my case, cheese, scrambled eggs, and Canadian bacon. These are just the perfect biteful.

Ingredients

  • 2 Tablespoons Unsalted Butter, Divided
  • 6 slices Nueske’s Canadian Bacon
  • 1 whole Egg, Scrambled And Cooked
  • 6 whole Flour Tortillas, Cut Into Smaller Circles
  • 1 cup Shredded Monterey Jack Cheese

Preparation

Take 1 tablespoon of butter and rub the insides of 6 of the muffin tins. Preheat oven to 400ºF.

Melt the remaining tablespoon of the butter in a skillet and add in Canadian bacon. Cook on each side for about 2 minutes, then remove from heat. Cut into small rounds using round cutters, or something that is small in diameter. Your goal here is presentation. Take the remaining scraps of Canadian bacon and go ahead and eat them.

Take the scrambled egg, and cut into the same size as the Canadian bacon. Each item should not overlap the muffin tin.

Form the cut tortillas into each muffin tin. Place in the preheated oven and cook for about 5 minutes until the tortillas are a light brown and have formed into their muffin mold.

After they are cooked, fill each cup with the shredded cheese, top with the egg round, and then top with the Canadian bacon. Place back in the oven and cook another 5 minutes.

Remove and plate.

The great thing about these breakfast cups is that you can stuff them with your favorite breakfast toppings. A 2-bite breakfast, these little morsels will have you making them time and time again. Let’s just say that after we had them, we wanted more. Next time, and that time will be coming shortly, I am going to fill the entire muffin tray with creations. Simple, fun, and definitely comforting. These breakfast cups are sure to please!
