A quick breakfast quesadilla that is healthy, creamy, cheesy, warm and chock full of fresh berries.
In a microwave safe bowl, add all your berries and microwave for 20 seconds. Than smush them with a fork.
Spray a griddle or skillet with cooking spray and heat on medium. Spread the cheese on half of the flatout bread and top the cheese with the berry mixture. Fold in half and place on skillet. Cook until bottom side starts to brown, about 2 minutes. Carefully flip and cook other side until lightly golden brown, about 1 minute.
Serve with extra berries, powdered sugar and maple syrup!
