Description

A warm and deliciously gooey oatmeal breakfast always reminds me of my youth and my mother making sure that I received a balanced breakfast for the day. This is a step up from just plain rolled oats out of the box.

An easy breakfast with a little pre-planning. So tasty and good for you.

Ingredients

  • FOR THE STEEL CUT OATS:
  • 4 cups Almond Breeze Unsweetened Vanilla Almond Milk Or Substitute An Equal Amount Of Water Instead
  • 1 cup Steel Cut Oats
  • 1 pinch Salt
  • FOR THE BERRY OATMEAL:
  • 1 cup Cooked Steel Cut Oats
  • 1 Tablespoon Slivered Almonds
  • 1 teaspoon Vanilla Extract
  • ¼ cups Almond Breeze Unsweetened Vanilla Almond Milk
  • 1 package Truvia Or Other Natural Sweetener, Optional (individual, Table Size Packet)
  • ¼ cups Sliced Frozen Berries

Preparation

Prepare the steel-cut oats:
In a 2-quart saucepan, bring the 4 cups of almond milk or water to a low boil. Add the 1 cup of steel-cuts oats and salt, and cook according to package instructions. Then cool to room temperature (about 1 hour). Store in the refrigerator or freezer and reheat as needed.

Personal notes: I used the largest pot I had to bring the almond milk to a boil. It is very foamy and you must stay with it, even if you cover it and let it simmer for 10 minutes. I also doubled the recipe, so that I didn’t have to keep remaking the oats it for the week. So … every morning I have oatmeal ready to add berries to it, or peaches if you like.

The above amount of oats makes four 1-cup servings.

Prepare your oatmeal:

Combine 1 cup of pre-cooked oatmeal, almonds, vanilla, almond milk, and sweetener in a cereal bowl and stir well. Place berries over the top. Microwave for 1 to 2 minutes.

Personal note: I don’t use the sweetener, this is very sweet already.
