Description

I had 2 really ripe bananas that I hated to just throw away, so I came up with these.

Ingredients

  • ¾ cups Flour
  • ¾ cups Whole Wheat Flour
  • 1 cup Old Fashioned Oats
  • ⅓ cups Sugar
  • ¼ cups Brown Sugar
  • 2 teaspoons Baking Powder
  • 1 teaspoon Baking Soda
  • ½ teaspoons Salt
  • 1 whole Egg
  • ¾ cups Milk
  • ⅓ cups Vegetable Oil
  • ½ teaspoons Vanilla Extract
  • 1 cup Mashed Bananas, About 2 Large
  • ¼ cups Pecans, Chopped
  • ¼ cups Chocolate Chips

Preparation

Preheat oven to 375ºF.

Combine flours, oats, sugars, baking powder, soda and salt.

In a large bowl, beat the egg lightly. Stir in the milk, oil, and vanilla. Add the mashed bananas, and combine thoroughly.

Stir the flour mixture into the banana mixture until just combined. Add pecans and chocolate chips.

Line muffin pan with baking liners. Pour batter evenly into muffin cups.

Bake for 18 minutes.

I followed this recipe to the dot (except I added all chocolate chips. I can’t help myself) and they were alright. They were pretty moist but I just prefer a stronger banana flavour. But that’s just me!

These were really amazing. I had a good lot of ripe bananas so I doubled the recipe and ended up using 5 bananas instead of 4. I also added 1/2 cup of chopped fresh sweet cherries that were about to meet the end of their time. By far the best baked banana anything I’ve ever made. I love the whole wheat flour and oats base… do you happen to have a version with cranberries & oranges?
