Description

Healthy, beautiful, and delicious!

Ingredients

  • 2 cups Rolled Oats
  • 1 teaspoon Baking Powder
  • ¼ teaspoons Salt
  • 1 whole Ripe Banana, Mashed
  • 1 whole Egg, Beaten
  • 1-½ cup Milk
  • 1 teaspoon Vanilla
  • 2 whole Ripe Bananas, Sliced
  • 1-½ Tablespoon Brown Sugar

Preparation

Preheat oven to 375 degrees F.

Combine all ingredients except for the two sliced bananas and the brown sugar, and mix thoroughly in a large bowl.

Line a small baking dish (I used a round tart pan) with parchment paper. Why? It will make this recipe much more enjoyable, trust me, no sticking! Spread out one of the sliced bananas on the bottom of the pan, and then pour the batter on top of the sliced banana layer. Lastly, spread the last sliced banana over the top of the mixture or make a design!

Bake in your preheated oven for 25 minutes. After 25 minutes, turn the oven to broil, sprinkle the brown sugar over the top of the oatmeal and bake for another 3 minutes. Then serve!

Thank you…..a great idea for making baked oatmeal taste better. I think we’ll add some chopped walnuts, too. Janet

Yum! I made this for breakfast the 2nd time this morning, very delicious! It has a sort of banana’s foster taste to it with the brown sugar on top. Thanks for the great recipe!
