Description

A simple recipe for French toast stuffed with bananas and finished with a granola topping. The perfect combination of crunchy and creamy!

Ingredients

  • 1 Tablespoon Butter
  • 2 Tablespoons Brown Sugar, Divided
  • 8 ounces, weight Cream Cheese (full Fat Or Light)
  • 2 teaspoons Vanilla, Divided
  • 6 slices Thick White Bread
  • 2 whole Ripe Bananas (peeled And Sliced)
  • 10 whole Large Eggs
  • ¾ cups Milk
  • 4 packages Granola Bars (any Flavor, Two Bars Per Package), Crushed

Preparation

Preheat oven to 350 F. Grease 9×10 baker with butter, and sprinkle 1 tablespoon of brown sugar on the bottom of the dish. Set aside.

In a small mixing bowl, mix together the cream cheese, 1 tablespoon brown sugar, and 1 teaspoon of vanilla. Spread one third of this mixture on top of one slice of bread. Top with a third of the banana slices and another piece of bread to form a sandwich. Do this three times in total.

Slice sandwiches into strips and place into the baking dish.

Whisk together eggs, milk and 1 teaspoon of vanilla. Pour on top of sandwiches and finish by sprinkling the crumbled granola on top. Cover with foil and bake for 30 minutes. Uncover and bake for ten more minutes.
