Description

Served hot, it’s like a slice of pumpkin pie. Cold? You’d swear you were eating pumpkin bread pudding. Either way it’s delicious, healthy and easy to become addicted to, says the woman who ate it every day for 3 weeks straight!

Ingredients

  • 15 ounces, weight Canned Pumpkin Puree
  • 2 whole Large Eggs
  • ½ cups Brown Sugar
  • 2 teaspoons Pumpkin Pie Spice
  • ½ teaspoons Salt
  • ¾ teaspoons Baking Powder
  • ½ teaspoons Vanilla Extract
  • 1-½ cup Milk
  • 2-½ cups Old-fashioned Oats (not Instant)

Preparation

Preheat oven to 350ºF.

In a large bowl, mix all ingredients except oats until smooth.

Stir in oats and mix until totally combined.

Pour mixture into a greased 8×8 pan. Cover with foil and bake for 30 minutes, then remove foil and bake for additional 15 minutes.

Makes 6-8 servings.

Lovely moist breakfast. A real treat. I’d probably add some sultanas next time (my hubby loves dried fruit in stuff) and double up the spice. Makes me want too invite people round for brunch and serve them this!
